Well, of course the drinks had to be green, so we settled on Mojitos – perfect for the warm evening. Hobart may be one step short of Antarctica, but we’re the food capital... so we fed our guests on Smoked Dover Salmon, Barilla Bay Oysters, Tempura Huon Valley Mushrooms and spoonfuls of Chicken Jungle Curry – all in the beautiful Henry Jones Art Hotel, one of Tasmania’s entrepreneurial landmarks. A century ago it was the hub of the bottling and preserving industry when Tasmania’s major export was fruit. Now it’s Hobart’s favourite hotel, right on the waterfront.
